Monthly Shopping – SEPTEMBER MENU

This month I did a lot more meals that needed last minute prepping…which, with better planning, might have worked out okay. But with a little guy and my husband working SOOO many nights, it made it rough to get dinner ready sometimes. But, we’re trying out more vegetarian meals and so far they have been a hit – even the Portabello Burgers! Enjoy…

Week 1:

Portabello Burgers

Garbonzo Cheese Salad

Pepperjack Chicken with Succotash

Cranberries, Almonds, Goat Cheese & Chicken on Salad

Chicken Tortilla Soup

Fish Tacos and Watermelon Salsa

Week 2:

Spinach, Tomato, Cheese Tortellini (I add portabellos and onions)

Tomato Spinach Omelets w/ Banana Bread

Marinated Chicken w/Broccoli Salad (and leftovers)

BBQ Chicken Sandwiches w/Salads

Meatloaf, Green Beans & Corn

BLT’s w/Fruit

Week 3:

Baked Stuffed Tomatoes (we ended up using peppers instead because I had a bunch leftover)

Lentil Burgers w/Sweet Potato Fries

Penne w/Butternut Squash and Goat Cheese (I added chicken and some roasted cherry tomatoes from my mother-in-law)

Sesame Chicken w/Broccoli and Rice

Summer Chicken Salad Wraps

Lemon Pepper Fish w/Sweet Potatoes and Green Beans

Week 4:

Black Bean & Avocado Lettuce Wraps w/Fruit & Yogurt

Omelets w/Yogurt, Granola, and Fruit

Baked Garlic Brown Sugar Chicken w/Quinoa Salad

Buffalo Chicken Taquitos w/Raw Veggies

Lasagna Soup w/Salads

Caesar Tuna Salads
