Monthly Shopping – AUGUST MENU

Summer is in full force and we are reaping the benefits of lots of wonderful fruits and veggies in our menu this month. My budget is always $230 and three weeks into this menu I’ve still got $13 left for a few items next week! Recipes with an * are written out below and here is the GROCERY LIST. Enjoy!

Week 1:

Greek Pasta Salad* w/Fruit

Hamburgers w/Cucumber Salad and Fruit

White Chicken Chili w/Salads

Chicken and Mushrooms w/Sweet Potatoes and Green Beans

Lemon Pepper Fish w/Rice and Garlic Mushrooms

Chicken Black Bean Wraps w/Corn Salsa

Week 2:

Lentil Bolognese w/Salad

Baked Stuffed Zucchini w/Fruit

BBQ Chicken Soup (I skipped the cornbread croutons) w/Salads

Chicken Caesar Salad w/Fruit

Grilled Strawberry Sandwiches w/Eggs

Red Beans and Rice w/Sausage

Week 3:

Greek Hummus Wraps w/Raw Veggies and Fruit (I used the White Bean Chile Spread instead of hummus)

Taco Salad w/Fruit (Homemade Taco Seasoning)

Honey Mustard Pretzel Chicken w/Green Beans

Chicken Club Sandwiches w/Chips and Fruit

Pan-Fried Fish w/Salads and Fruit

Garlic Brown Sugar Chicken w/Sweet Potatoes

Week 4:

Vegetable Paela w/Fruit

Anna’s Stuffed Pepper Soup* w/Bread

Pulled BBQ Chicken Sandwiches w/Cole Slaw and Fruit

Chicken Fiesta Salad w/Fruit

Crunchy Fruit Salad* w/Eggs and Blueberry Oat Bran Muffins

Sausage and Peppers w/Rice

RECIPES:

Greek Pasta Salad

1 box pasta

1 lb. cooked and chopped chicken

1 can artichoke hearts

1 can olives

1 tomato

1/2 package crumbled feta cheese

Vinaigrette of your choice

Cook pasta according to package directions. Dice artichokes, olives and tomato. Combine all ingredients, serve cold.

Anna’s Stuffed Pepper Soup (Thanks for sharing girlfriend!)

1 lb ground meat (replace with corn to make vegetarian)
1 (28 oz) can tomato sauce
1 (28 oz) can petite diced tomatoes
2 c. cooked rice
2 c. chopped green peppers
2 beef bouillon cubes (skip to make soup vegetarian or replace water and cubes with 2 cups chicken broth)
1/4 c. brown sugar
1/2 tsp. salt
1/4 tsp. pepper
2 cups water, or more to thin it out if you want
Brown ground meat in large kettle.  Add remaining ingredients and bring to boil.  Simmer until peppers are tender (45-60 min).

Crunchy Fruit Salad

2 whole apples

small bunch of grapes

1/2 watermelon or whole cantaloupe

1/2 cup granola cereal or chopped granola bars

Honey for drizzling

Dice fruit and combine all ingredients. Serve cold, drizzled with honey.
