Monthly Shopping – JUNE MENU

We try to eat as healthy as we can eliminating a lot of bread, sodium, and fried foods, but still eating hearty meals, which can be very challenging with an infant and a busy schedule. I try to plan meals I can prepare quickly or freeze for easy prep later. We also have one vegetarian/meatless and one breakfast dinner every week. I find most of my meal ideas on Pinterest, Spark Recipes, All Recipes, or in my own recipe box and favorite cookbooks. Recipes that are not linked are written out at the end of this post.

Below is my menu for this month. The meals with the * at the end, are meals that will have leftovers for lunch or breakfast.

Week 1:

Chicken Tortilla Soup w/Salads*

Chicken Fiesta Salad w/Yogurt and Fruit

Herbed Pork w/Sweet Potatoes and Veggies*

Crustless Spinach Onion Feta Quiche w/Sausage*

Skillet White Beans, Tomatoes, and Spinach w/Wheat Linguine

Turkey Burgers w/Broccoli*

Week 2:

Vegetarian Chili w/Grilled Cheese*

Cranberry, Almond, Chicken Salad w/Yogurt and Fruit

BBQ Chicken Flatbread Pizzas (I’m substituting leftover Pita from the Layered Greek Bean Dip meal from Week #3)

Eggs w/Strawberry Banana Baked Oatmeal and Yogurt*

Spaghetti Squash Alfredo w/Salads

Turkey Burgers w/Cole Slaw and Fruit*

Week 3:

Sausage Bean Supper w/Salads*

Chicken Fiesta Salad w/Yogurt and Fruit

Honey Garlic Pork w/Rice and Veggies*

Eggs w/Apple Pastry Tarts* (I’m substituting homemade Pie Crust for the Phyllo Dough this calls for, but that is optional)

Layered Greek Bean Dip w/Toasted Pita* (I’m substituting the White Bean Dip below for the Hummus)

Turkey Burgers w/Asparagus

Week 4:

Creamy Farmhouse Chicken and Garden Soup w/Grilled Cheese*

Chicken Caesar Salad w/Yogurt and Fruit

Jalapeno Popper Stuffed Chicken w/Rice and Salads

Eggs w/Mushroom Sausage Gravy and Biscuits*

Baked Ravioli w/Salads*

Turkey Burgers w/Salads and Fruit


Chicken Fiesta Salad

Bed of lettuces

Black Beans


Grilled Chicken



Use dallops of Salsa and Sour Cream with a little Lime Juice instead of dressing

Turkey Burgers

1 lb. ground turkey (beef or chicken)

1/2 cup oatmeal

1 tbl. Worcestershire sauce

1 egg

Mix all ingredients and form into four hamburger patties, cook on stovetop or grill

White Bean Dip (Hummus)

1 can Northern/Canellini Beans, drained and rinsed

1 tsp. lemon juice

1 Tbl. minced garlic

1-2 Tbl. Olive Oil

Pour all ingredients into a blender and add suggested oil until consistency is like hummus
